Our Favorite Recipes: Steak Burrito Bowls

Katie mentioned that she made these Steak Burrito Bowls the other week and our entire team said, “We need that recipe!” So here it is: Katie’s steak burrito bowls. Enjoy!

STEAK BURRITO BOWLS INGREDIENTS

  • 1-2lb skirt steak (you can use any kind you wish, just make sure it is thin and you can slice it into little strips)
  • 1 onion
  • 1 bell pepper
  • Kinders taco seasoning
  • Jasmine rice packet
  • 1-2 cups frozen corn (use more based on family size or hungry husband)
  • 1-2 cups black beans-rinsed (see comment above)

    Optional Toppings:
  • Pico de Gallo
  • Avocado
  • 1-2 chopped jalapeno peppers
  • Hot Sauce
  • Shredded Cheese
  • Sour Cream 

PREPARATION

  1. Prep the Ingredients:
    Slice the steak into thin strips and set aside. Then cut the onion and bell pepper into similar-sized strips and set aside as well.
  2. Cook the Rice:
    Prepare jasmine rice according to the package instructions. Pro tip: Once the rice is simmering and covered, don’t lift the lid—no stirring! Let it steam undisturbed until the timer goes off for perfectly fluffy rice.
  3. Start Cooking the Veggies:
    Heat your Blackstone griddle or a large skillet on the stove. Add a bit of oil (or butter if preferred), then toss on the sliced onions and peppers. Let them cook just slightly—remember, the steak cooks quickly, so you don’t want to overdo the veggies.
  4. Add Corn and Beans:
    Add your frozen corn and beans to the griddle/skillet. Splash in a bit of water and sprinkle on your favorite seasoning. Cover with a bowl or lid to allow them to steam for a few minutes.
  5. Cook the Steak:
    After about 5–7 minutes of the veggies and corn/beans cooking, add the steak to the hot surface with a little more oil. Let it sear and cook for another 5–7 minutes, stirring occasionally.
  6. Season and Finish:
    Sprinkle more seasoning over the steak, veggies, and beans to taste. Give everything a good toss to mix and finish cooking.
  7. Assemble Your Bowls:
    Start with a base of jasmine rice, then layer on the steak, sautéed veggies, and corn/beans. Top with your favorite extras—think shredded cheese, salsa, sour cream, avocado, or a squeeze of lime.
